Hi Sue

1. Set your sails right.
Set the sails to the approximate position before trimming and use your windex (not the electronic wind display)

2. Use your tell tails to trim.
On the genoa if the windward tell tail is falling bring in the sheet.  If the leward tell tail is falling loosen the sheet.  Both the tell tails should be streaming along the sail.
In the main sail your tell tails are on the leach.  They should be flying behind.  If they are falling bring in the sheet, or let lit out until they fly.
You may need to tighten your kicker to give more twist in the upper part of the main sail to make the top tell tails fly.

3. The position of the sheets is very important.
The genoa carr should be positioned to flatten or deepend the sail.
The main sheet traveller helps to position the main sail boom to compensate the main sheet swinging.  Adjust your back stay and your outhaul to flatten or deepen your main sail.
